2-3 golden beets
2-3 T vegetable oil
salt and pepper to taste
Peel and chop Golden Beets into cubes.
Toss with vegetable oil and put on a baking sheet or tray, in a single layer.
Add salt and pepper to taste.
Roast at 400 degrees F for about 25 minutes, or until beets are soft, with golden brown edges.
Serve immediately.
